BECAUSE INGREDIENTS MATTER

What you put in your body is important. All of our products are baked with real, whole, non-GMO and almost completely organic ingredients. Every ingredient is certified GLUTEN-FREE for safety and produced in our completely gluten-free kitchen – so no cross contamination. We rarely use refined sugar, but when we do, it is organic, ethical cane sugar. We don’t skimp on what we source. We go for local when we can-supporting our local farmers and producers at the farmer's markets. We bake in small batches by hand. All of these details make our goods healthier for you and they taste better.

  

BECAUSE OUR GUT MATTERS

The long fermentation process used in sourdough bread allows bacteria to better break down carbohydrates in bread, making it easier to digest and releasing nutrients so our bodies can absorb them more easily. This is believed to be because of sourdough’s prebiotic content and probiotic-like properties. The gluten-free whole grains we use provide a good amount of minerals, including potassium, phosphate, magnesium and zinc.

 

BECAUSE HONESTY MATTERS

We believe in transparency. If we use it, you will know it. Our ingredient lists include simple ingredients you can recognize and pronounce. There is nothing highly processed. For sweeteners, we use 100% pure maple syrup, local Texas honey and coconut sugar. Sometimes we think butter makes something better! Sometimes a tiny bit of organic cane sugar is needed. It’s not often we use these ingredients, but we believe it is worth it when we do. We hope you appreciate that.  
 
BECAUSE OUR EARTH MATTERS
We recycle and compost in our kitchen. In Austin, we are lucky to have citywide compost collection. Our commercial kitchen facility, PrepATX provides it as well. Additionally, we go out of our way to source packaging that is better for the environment. We source recycled, compostable and reusable packaging. We also try to reuse as much as we can. 

We believe in the creative reuse of ingredients that would otherwise be food waste. For us, that means upcycling the pulp from local organic alternative milk companies, dehydrating it, processing it and turning it into almond meal for baking. It also means salvaging the sourdough discard from our breads and using it as the base for our crackers, biscuits and chocolate chip cookies.

  

BECAUSE GIVING BACK MATTERS

Whether it’s the giving of time, in kind or monetary donations, science shows giving back just makes people feel good. It sure makes us feel good. It also provides a sense of community and well-being. We are looking to expand this ethos as we grow.

We believe you care about what you are putting into your body. We are willing to source better quality ingredients and packaging that are better for you and the environment and believe you can get behind this idea as well. It might cost a bit more, but you matter.
